“Beer is the drink of those who think and feel no fear nor fetter — who do not drink to senseless sink, but drink to think the better.”
We strive to brew unexpected beers. At KSB, craft and innovation are not limited to working with new hops or yeast strains. We research new ingredients and perfect our drinkers' favourite recipes as eagerly as we dig up and rediscover classic and forgotten styles.
It all ignites when we mix this wild availability of ideas and ingredients with energy borrowed from other domains — graphic design, music and literature.
West Coast, New England and Triple IPAs built on the freshest hop lots we can source.
French oak, mixed fermentation and barrel-aged Imperial Stouts.
Decoction, Czech floor malts, Czech whole leaf hops and the perfect pours served z tanku (straight from the tank).

With an early start in home brewing and a much-cherished DNA from his great-grandfather's brewery, Gustavo “KOALA” Simoni opened KSB in 2012 with a tight 8 bbl cellar. Bootstrapping and hardcore D.I.Y. dominated the brewery's first years — a challenge that set the brand as an absolute pioneer in a very young Brazilian craft beer market.
KSB shocked a generation that had known barely a handful of beers, launching ultra-hopped IPAs that blew both laymen's and critics' minds. Imperial IPAs, New England IPAs, mixed culture, coffee beers and Imperial Stouts flowed from the taps and, later, into its own cans.
Beers such as the West Coast Double IPA California Crossing and Livin' the Dream, a best-selling New England IPA, moved from underground classics to the general public's reference for a quality brew with prime ingredients.
Fourteen years in, with an upgraded brewhouse and far greater capacity, KSB is equally known for keeping its doors open to collaborators across the beer scene — brewers, coffee roasters, artists and bands from all over the world.
Gus “KOALA” Simoni is a master brewer, musician, audio engineer and business graduate. Father of two young boys and an entrepreneur with nearly two decades of nonstop passion for his creations and a body-and-soul devotion to KSB.
